This report includes the process economics of enzyme production by a surface cultivation process and a submerged cultivation process, of enzyme immobilization by an entrapment/cross-linking process, and of high-fructose syrup production through the use of an immobilized enzyme. It also contains a general review of the production of certain animal and plant enzymes, the recovery and purification of enzymes, and enzyme-catalyzed chemical reactions.
Technical information for the study was obtained from patents and from material published in journals or by enzyme producers.
